Top Five Dishes from Surat, India

Today I will talk about the top five dishes which are very famous in my home of Surat, India: Dhokla, Khandvi, Thepla, Jalebi-Fafda, and Sev Tameta nu saak. These dishes are so delicious; I love them. I love to cook, so I always try to make different types of dishes at home. These are very easy to make and very spicy. In my hometown, there are various stalls available on the street where people go with their friends and families—you can also find these dishes here.

1. Dhokla 
Dhokla is a huge steamed cake made from souring rice and chickpea. It is smooth and soft and often eaten for a meal or as breakfast. 

Ingredients include gram flour (besan), yogurt, water, ginger-green chilli paste, salt, turmeric powder, citric acid, salt, mustard seeds, sesame seeds, green chilies, curry leaves, sugar, and coriander leaves. 

Dhokla is a steamed springy, sweet cake made from gram flour and yogurt. The ginger green chili paste adds spice to the sweet and slightly spicy taste. A mix of mustard seed, sesame seeds, and curry leaves give an aromatic and crunchy flavour.

2.   Khandvi
Khandvi is a soft and easy to eat dish made with gram flour and yogurt. These delicious items usually include coconut oil and mustard seed for flavour.

Ingredients for this dish include gram flour (also known as besan), yogurt, water, turmeric powder, ginger green chilli paste salt, mustard and sesame seeds, curry leaves, coconut flakes, and coriander leaves. 

Khandvi is mildly spicy and has a texture that dissolves in your mouth.

3. Thepla

Thepla is a traditional Indian thin bread that was formed in Gujarat. It is a Gujarati cuisine known for its flavor and health benefits 

Ingredients for thepla are whole wheat flour, leaves of fenugreek (methi), yogurt, water, paste of ginger, garlic paste, green chilli, turmeric, red chili, cumin seeds, salt, and oil. 

Thepla is a delicate and thin bread made from fenugreek (methi) leaves and whole wheat flour. It has a delicious taste with a touch of spice and the taste of a plant called flag. The yogurt gives a delicate and fresh texture.

4. Jalebi-Fafda

Jalebi and fafda is a popular breakfast combination in Gujarat, India, especially during festivals like Dussehra.

Ingredients for fafda include gram flour (besan), carom seeds, turmeric powder, salt, and oil. Ingredients for jalebi involve regular flour, yogurt, water, sugar, saffron, cardamom powder, and ghee.

Fafda is a fresh and sweet snack. Jalebi is a fried sweet that is soaked in sugar syrup and then flavored with cardamom and saffron. The mix of firm, hot fafda and sweet sugary jalebi provides the ideal taste balance.

5. Sev tameta nu shaak

This dish is made by cooking tomatoes, onions, and a mix of spices till they form a thick curry sauce. Sev (crunchy chickpea flour noodle) is placed on top before serving to add a crunchy texture. It is eaten with bread, such as roti or paratha. 

Ingredients include tomatoes, onions, green chilies, ginger, garlic, turmeric, red stew powder (comprised of fried tomatoes, onion, garlic, and red bell pepper), coriander powder, sev, and oil. 

Tameta Nu Shaak tastes like a spicy, hot tomato curry with crunchy bits on top.
